Description White Chantecler Chicken Breed History and Origin The Chantecler chicken originated in the Quebec Province of Canada and is recognized as the first Canadian breed of chicken. Developed under the supervision of Brother Chatelain, monks of the Cistercian Abbey in Oka, Quebec worked to create a hardy fowl with a vigorous and rustic temperament that could withstand the harsh climatic conditions of Canada. The White Chantecler was introduced to the public in 1918 and admitted to the American Poultry Association Standard of Perfection in 1921 as part of the American Class. Cackle Hatchery® began developing its current breeding program in 2012 using seed stock from Greg Oakes and John W. Blehm. Appearance and Breed Characteristics White Chantecler chickens are known for their clean white plumage and compact body shape. One of the breed’s most distinctive features is its small cushion comb, which appears like a small round button sitting low on the head. They also have very small or nearly absent wattles, a trait that was intentionally bred to reduce frostbite in cold northern climates. Mature hens typically weigh around 6½ pounds, while roosters average about 8½ pounds. Pullets generally weigh around 5½ pounds and cockerels approximately 7½ pounds. Their sturdy body type and thick feathering make them especially well suited for cold-weather environments. Egg Production and Performance White Chantecler hens are reliable layers of large brown eggs, producing approximately 150–200 or more eggs per year depending on flock management and environmental conditions. The breed is particularly known for being a good winter egg layer, which was one of the original goals when the breed was developed in Canada. Temperament and Flock Suitability Chantecler chickens are known for their calm, gentle, and personable temperament, making them a great choice for backyard flocks and family farms. They adapt well to typical poultry housing systems and generally prefer roost heights between two and four feet. Fertility percentages typically range between 40–55%, with a recommended mating ratio of seven females to one male. Broodiness may occur occasionally among hens.
